Serves 4
Ingredients:
- 400g skinless salmon fillets, cut into 2cm pieces
- 200g soba noodles
- 4 teaspoons extra virgin olive oil
- 1 small red onion, chopped
- 2 bunches broccolini, chopped
- 2 large carrots, sliced into small batons
- ½ bunch spring onions, sliced
- 1 clove garlic
- 1 tablespoon minced ginger (or 1 teaspoon dried ginger)
- 1 tablespoon oyster sauce
- Sesame seeds, to garnish
Method:
- Prepare the soba noodles according to packet instructions. Drain and set aside
- Heat 1 teaspoon of the oil in a large wok over high heat. Add the salmon and cook for 1 to 2 minutes each side or until golden. Transfer to a plate.
- Return the wok to high heat and add remaining oil with the red onion, garlic and ginger. Stir-fry for 30 seconds or until aromatic. Add the broccolini and carrot and stir-fry for a further 2 minutes or until just tender
- Add the oyster sauce to the wok with the salmon and noodles and stir-fry everything for 1 minute or until heated through.
- Serve sprinkled with chopped spring onions and sesame seeds.
