Sesame Salmon and Soba Noodle Stir Fry

Serves 4

Ingredients:

  • 400g skinless salmon fillets, cut into 2cm pieces
  • 200g soba noodles
  • 4 teaspoons extra virgin olive oil
  • 1 small red onion, chopped
  • 2 bunches broccolini, chopped
  • 2 large carrots, sliced into small batons
  • ½ bunch spring onions, sliced
  • 1 clove garlic
  • 1 tablespoon minced ginger (or 1 teaspoon dried ginger)
  • 1 tablespoon oyster sauce
  • Sesame seeds, to garnish
Method:
  1. Prepare the soba noodles according to packet instructions. Drain and set aside
  2. Heat 1 teaspoon of the oil in a large wok over high heat. Add the salmon and cook for 1 to 2 minutes each side or until golden. Transfer to a plate.
  3. Return the wok to high heat and add remaining oil with the red onion, garlic and ginger. Stir-fry for 30 seconds or until aromatic. Add the broccolini and carrot and stir-fry for a further 2 minutes or until just tender
  4. Add the oyster sauce to the wok with the salmon and noodles and stir-fry everything for 1 minute or until heated through.
  5. Serve sprinkled with chopped spring onions and sesame seeds.
