Mother’s Day Breakfast: Overnight Oats Two Ways

Serves 4

Ingredients:

  • 1 ½ cups rolled oats
  • 1 ½ cups milk
  • 1 ½ cups Greek yoghurt

Method

  1. Place the oats, milk and yoghurt in a large container that has an airtight seal. Stir well, cover and refrigerate to soak overnight
  2. In the morning, divide oats among four bowls. Add toppings of your choice and serve.

Variations

  1. Banana Split
    Slice 2 bananas and a handful of strawberries. Top each bowl of basic overnight oats with fruit, 1 tablespoon shredded coconut and 1 tablespoon of crushed pistachios.
  2. Tropical Coconut Oats
    Slice 2 bananas, 2 kiwifruit and 1 handful of frozen mango. Top each bowl of basic overnight oats with a few raspberries and scatter with 1 tablespoon of shredded coconut.

Tip

For a warm porridge, heat up the overnight oats mixture either in the microwave for 30 seconds to 1 minute or on the stove until the oats reach a creamy consistency. Add your toppings of choice after heating.
