Miss Mary’s Cornbread

Have some (baking) fun this weekend and make your very own berry cornbread. Miss Mary's recipe is one of our favourites, as it's extremely simple, and the delicious end product is light, fluffy and full of flavour, making it the perfect sweet treat for your morning or afternoon tea.

The method is easy, so get your child/ren involved for old-fashioned fun in the kitchen.

Ingredients

  • 1 cup cornmeal (polenta)

  • 1 cup of self-raising flour

  • 1 teaspoon baking powder

  • ½ teaspoon bi-carb soda

  • ½ cup (445gm) butter of your choice

  • ¼ cup light brown sugar

  • 2 tablespoons of honey

  • ¼ cup apple sauce

  • 2/3 cup buttermilk (room temperature)

  • 150g of blueberries, fresh or frozen and crushed (you can even use raspberries if you prefer)

Method

  1. Preheat oven to 205°C

  2. Grease and line a large baking tray and set it aside, you'll need it for later

  3. Whisk the cornmeal, flour, baking powder, bi-carb soda and berries in a bowl, and set it aside

  4. In a separate bowl, whisk melted butter, sugar and honey together until completely smooth and thick, and slowly add the apple sauce, continuing to whisk until combined. The, add the buttermilk and continue to whisk

  5. Pour the wet ingredients into the dry ingredients and whisk until just combined. Do not over mix

  6. Pour batter into then prepared pan, bake for 20 minutes or until brown on top, checking that the centre is cooked right through.
