Menu Spotlight: Watermelon Pizza

Thanks to The Lifestyle Dietitian, we’d like to share a fun, tasty and nutritious recipe — the watermelon pizza. Slice by slice, each mouthful is full of healthy, fresh goodness, and is a wonderful way to get your children involved in helping to make and master this snack.

 

Time: 5 minutes | Serves: Four

Ingredients:
∙ ½ cup of fruit-free, nut-free muesli
∙ watermelon, cut into triangle slides (as pictured)
∙ 500g yoghurt
∙ Chopped seasonal fruit of your choice (e.g. grapes, berries)

Method:
1. Spread approximately 100g of yoghurt on each slice of watermelon (use your discretion to spread the amount desired, to cover the entire surface)
2. Sprinkle approximately 1 tablespoon of muesli
3. Top with a small handful of chopped fruit
4. Snack away!

The ingredients and proportions in this recipe can be modified according to your liking. For instance, yoghurt can be flavour of your choice, or even a dairy-free choice; or you can even use a blend of muesli with dried fruit, in place of chopped seasonal fresh fruit.
